St Patrick’s Day is fast approaching, so why not involve the children and make some fun and tasty green treats they will love to eat?
Shamrock bars
To make delicious Shamrock bars, you will need ½ cup of melted butter, 1½ cups of chocolate Graham cracker crumbs, 14oz can of sweetened condensed milk, 1 cup of pecans, 1 cup of chopped Oreo cookies, and an 11oz bag of mint M&Ms. Combine the melted butter with the Graham cracker crumbs, pressing them down firmly to line a greased pan. Pour the full can of condensed milk over the layer, followed by the pecans, whole M&Ms and the chopped Oreo cookies, then bake for 25 minutes. Why not make some shamrock mint mini brownies for your little leprechauns? Make up a box of brownie mix and half-fill some cupcake pans. Bake the mixture for around 10 min and allow the brownies to rest for a few minutes.

Clover Rice Krispie treats
To make clover Rice Krispie treats, you will need five cups of Rice Krispies, five cups of mini marshmallows, ¼ cup of butter, some green food colouring and some St Patrick’s Day sprinkles.
Melt the butter in a saucepan over a low heat. Gradually add the marshmallows, stirring to allow them to melt fully. Stir in the green food colouring and add the Rice Krispies until they are completely coated. To make clover Rice Krispie treats, you will need five cups of Rice Krispies, five cups of mini marshmallows, ¼ cup of butter, some green food colouring and some St Patrick’s Days sprinkles. Take a buttered pan and pour the mixture out, using a spatula to press down firmly. Using a shamrock cookie cutter, create your clover Rice Krispie treats and decorate with the sprinkles.

Shamrock mint mini brownies
Why not make some shamrock mint mini brownies for your little leprechauns? Make up a box of brownie mix and half-fill some cupcake pans. Bake the mixture for around 10 minutes and allow the brownies to rest for a few minutes.
Next, make a ganache by bringing two to three cups of heavy cream to the boil in a saucepan and adding one cup of chocolate chips. Combine 8oz of softened some cream cheese with ¼ cup of butter, four drops of green food colouring and ½ teaspoon of mint extract, finally adding ¾ of a cup of powdered sugar for the icing. Dip one side of each brownie into the ganache and then swirl the icing on top, allowing to fully cool before eating.
